A rich, silky chocolate mousse made with cottage cheese for a high-protein, low-guilt dessert that tastes like the real thing. Ready in under 10 minutes with just a blender.

Ingredients

Scale
  • 1 cup (240g) full-fat cottage cheese
  • 3 tablespoons (18g) unsweetened cocoa powder (preferably Dutch-process)
  • 3 tablespoons (45ml) maple syrup or honey
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of fine sea salt
  • Optional: 2 oz (55g) melted dark chocolate (60-70% cacao)

Instructions

  1. Start with cold cottage cheese. Add it to a blender or food processor.
  2. Blend the cottage cheese alone for about 30 seconds until smooth. Scrape down the sides.
  3. Add the cocoa powder, maple syrup, vanilla extract, and salt. If using melted dark chocolate, add it now.
  4. Blend on high speed for 60 to 90 seconds until silky smooth. Scrape down the sides once or twice.
  5. Taste and adjust sweetness if needed. If too thin, add another tablespoon of cocoa powder and blend. If too thick, add a teaspoon of milk and pulse.
  6. Divide the mousse among 2 to 4 small bowls, ramekins, or jars.
  7. Chill for at least 30 minutes to firm up.
  8. Add toppings just before serving, such as fresh berries, shaved dark chocolate, flaky sea salt, or whipped cream.

Notes

Full-fat cottage cheese is essential for creamy texture. Chilling for at least 30 minutes transforms the texture. The mousse improves after a few hours in the fridge. Do not freeze.
