A quick and easy creamy green bean casserole that is naturally gluten-free. This dish combines tender green beans with a rich mushroom sauce, sharp cheddar cheese, and crispy fried onions for a comforting side dish perfect for busy weeknights or holidays.

Ingredients

Scale
  • 2 pounds fresh green beans, trimmed and cut into 1-inch pieces (or frozen, thawed and drained)
  • 1 can (10.5 oz) gluten-free cream of mushroom soup
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 cup shredded sharp cheddar cheese
  • 1.5 cups gluten-free crispy fried onions

Instructions

  1. Preheat oven to 350°F (175°C). If using fresh green beans, blanch in boiling water for 3-4 minutes, then drain and rinse with cold water. If using frozen, thaw and squeeze out excess water.
  2. In a large mixing bowl, whisk together the gluten-free cream of mushroom soup, heavy cream, Dijon mustard, garlic powder, salt, and pepper until smooth.
  3. Add the prepared green beans to the sauce mixture and toss gently until evenly coated.
  4. Pour the mixture into a greased 9×13 inch baking dish and spread evenly.
  5. Sprinkle the shredded cheddar cheese over the top, followed by a generous layer of crispy fried onions.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly and the onions are golden brown.
  7. Let the casserole rest for 5 minutes before serving to allow the sauce to thicken.

Notes

Ensure frozen beans are thoroughly drained to prevent a watery casserole. For extra crispy onions, you can broil for the last 2 minutes, watching closely to avoid burning. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven at 350°F.
