  • 2 medium acorn squash
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 large yellow onion, diced
  • 3–4 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin seeds
  • 4 cups vegetable broth
  • 1/4 cup apple cider
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • 1 tablespoon lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut acorn squash in half lengthwise, scoop out seeds, brush cut sides with olive oil, and season with salt. Roast cut-side down for 40-45 minutes until tender. Scoop out flesh and discard skin.
  3. Heat 2 tablespoons olive oil in a large Dutch oven over medium heat. Sauté diced onion for 5 minutes until softened.
  4. Add minced garlic, cumin seeds, and curry powder. Cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Add roasted squash flesh, vegetable broth, and apple cider to the pot. Stir to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  7. Remove from heat and use an immersion blender (or standard blender in batches) to puree the soup until smooth.
  8. Stir in coconut milk and ground ginger. Heat gently over low heat for 5 minutes without boiling. Stir in lime juice and adjust seasoning with salt and pepper.
  9. Serve hot, garnished with toasted squash seeds and fresh cilantro.

Notes

Roasting the squash is crucial for developing flavor and avoiding a watery texture. Toasting the spices in oil releases their essential oils for a more potent flavor. Use full-fat coconut milk for the best creamy texture. If the soup is too thick, add more broth; if too thin, simmer uncovered. Leftovers taste even better the next day.
