  • 1 tablespoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1/4 cup fresh chives, chopped (for garnish)

Instructions

  1. Peel the russet potatoes and wash them thoroughly. Cut into uniform 2-inch chunks to ensure even cooking.
  2. Place potato chunks in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender.
  3. Drain the potatoes well. Do not rinse them out to retain some starch for texture.
  4. Pour chicken broth and minced garlic into the bottom of a 6-quart slow cooker.
  5. Transfer the drained potatoes into the slow cooker.
  6. Cook on Low setting for 2 to 3 hours, or until potatoes are very soft and break apart easily.
  7. Add the cubed butter and heavy cream to the hot potatoes. Let sit for a minute to soften.
  8. Mash the potatoes with a potato masher or electric mixer on low speed for about 30 seconds until smooth. Do not overmix.
  9. Season with salt and pepper to taste. Adjust consistency with more cream if too thick, or let sit on Warm to reduce if too thin.
  10. Garnish with fresh chives and serve hot.
