A comforting and elegant slow cooker chicken dish with a rich, creamy sun-dried tomato sauce that comes together with minimal prep and effort.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams)
  • 1/2 cup chopped sun-dried tomatoes (oil-packed recommended)
  • 3 cloves garlic, minced
  • 1 cup low sodium chicken broth (240 ml)
  • 1/2 cup heavy cream (120 ml)
  • 4 ounces cream cheese, softened (115 grams)
  • 1/3 cup grated Parmesan cheese (about 30 grams)
  • 1 teaspoon Italian seasoning (blend of dried oregano, basil, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • A handful fresh basil, chopped

Instructions

  1. Pat the chicken breasts dry and season both sides with salt, black pepper, and Italian seasoning.
  2. Place the chicken breasts at the bottom of the crockpot. Scatter chopped sun-dried tomatoes and minced garlic over the chicken. Pour chicken broth around the sides, avoiding pouring directly on the chicken.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken reaches 165°F (74°C) and is tender.
  4. While the chicken cooks, soften cream cheese in a bowl. Whisk in heavy cream and grated Parmesan cheese until smooth. Add red pepper flakes if using.
  5. Remove chicken from crockpot and set aside. Stir the cream cheese mixture into the crockpot with cooking juices and sun-dried tomatoes. Return chicken to crockpot, coating with sauce.
  6. Cook uncovered on low for an additional 15-20 minutes to thicken the sauce.
  7. Sprinkle chopped fresh basil over the top before serving.

Notes

Add cream cheese and dairy near the end of cooking to prevent graininess. Use low sodium broth to control saltiness. If sauce is too thin, whisk in a slurry of 1 teaspoon cornstarch and 1 tablespoon water and cook on high for 5 minutes. For dairy-free, substitute coconut cream and vegan cream cheese. Adjust cooking time if using chicken thighs or tofu.
