A creamy, cheesy, and hearty crockpot soup that mimics the flavor of a classic cheeseburger, perfect for busy nights and comfort food lovers.

  • 1 pound lean ground beef (85/15 preferred)
  • 4 medium russet potatoes (about 700g), peeled and diced into 1-inch cubes
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low sodium beef broth
  • 1 cup heavy cream (240ml)
  • 2 cups shredded cheddar cheese (about 200g), sharp or mild
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and freshly ground black pepper to taste
  • Optional toppings: cooked and crumbled bacon bits, sliced green onions, pickle relish, shredded lettuce

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned (about 6-7 minutes).
  2. Add the chopped onion and minced garlic to the skillet and cook until softened and fragrant (about 3 minutes). Drain excess fat if necessary.
  3. While the beef is browning, peel and dice the russet potatoes into roughly 1-inch cubes.
  4. Transfer the browned beef mixture to the crockpot. Add the diced potatoes and pour in 4 cups of beef broth.
  5. Stir in the Dijon mustard and Worcestershire sauce. Season lightly with salt and pepper.
  6. Cover and cook on LOW for 3.5 to 4 hours, or until potatoes are tender when pierced with a fork.
  7. About 15 minutes before serving, stir in the heavy cream and shredded cheddar cheese. Mix gently until cheese melts completely and soup turns creamy.
  8. If the soup is too thick, add a splash more broth or cream to reach desired consistency.
  9. Taste and adjust salt and pepper as needed. Add extra mustard or Worcestershire sauce if desired.
  10. Serve hot with optional toppings like bacon bits, green onions, pickle relish, or shredded lettuce.

Notes

Do not skip browning the beef as it adds caramelized flavor. Keep potato chunks uniform for even cooking. Use sharp cheddar cheese for best melt and flavor. Adjust thickness after adding cream and cheese by thinning with broth or milk. Taste and adjust salt near the end due to salty broth and cheese. For smoother texture, puree about a third of the soup with an immersion blender but keep some chunks.
