A velvety smooth, rich, and comforting slow cooker soup made with just a few simple ingredients. This easy 4-ingredient style recipe delivers restaurant-quality texture with minimal effort.

  • 1 head fresh broccoli, cut into small florets (or 1 bag frozen broccoli)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 teaspoon garlic powder
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 cup heavy cream or half-and-half
  • 2 cups sharp cheddar cheese, freshly grated
  • Salt and black pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Wash and cut the broccoli into small florets. Dice the onion and mince the garlic.
  2. In a skillet, melt butter over medium heat. Sauté the onion and garlic for 3-4 minutes until softened (optional but recommended for deeper flavor).
  3. Add the broccoli, sautéed onions/garlic, garlic powder, and broth to the slow cooker. Stir to combine.
  4. Cover and cook on low for 4-6 hours until the broccoli is very tender.
  5. Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, blend in batches in a countertop blender, venting the lid.
  6. Stir in the heavy cream or half-and-half.
  7. Gradually add the freshly grated cheddar cheese, stirring constantly until melted and smooth.
  8. Season with salt, black pepper, and a pinch of nutmeg if desired. Serve immediately.

Notes

For the smoothest texture, grate your own cheese from a block rather than using pre-shredded cheese, which contains anti-caking agents. Blend the soup before adding the cheese to prevent clumping. Add cream and cheese at the end of cooking to prevent separation. If freezing, freeze the soup base before adding dairy.
