A quick and elegant holiday appetizer featuring a wheel of baked brie topped with sweet fig jam, fresh rosemary, and honey. It transforms a simple cheese into a gooey, crowd-pleasing dip perfect for last-minute gatherings.

  • 1 wheel of Brie cheese (approx. 8–10 oz)
  • 1/3 cup fig jam
  • 1 tablespoon fresh rosemary (needles stripped and chopped)
  • 1 tablespoon honey
  • 1/4 teaspoon black pepper (freshly cracked)
  • Crackers, baguette slices, or apple slices for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Remove the brie from its packaging and pat it dry with a paper towel to remove excess moisture.
  3. Place the brie wheel in a small baking dish. Using a paring knife, gently score the top rind in a crosshatch pattern, making shallow cuts only.
  4. Dollop the fig jam onto the top of the brie and spread it out, leaving a small border around the edge to prevent spilling.
  5. Drizzle the honey over the jam.
  6. Sprinkle the chopped fresh rosemary and black pepper evenly over the toppings.
  7. Bake in the center of the oven for 15-20 minutes, until the cheese feels soft like a firm pillow when pressed gently.
  8. Remove from the oven and let it rest for 5 minutes to allow the structure to set slightly.
  9. Serve warm with crackers, bread, or fruit.

Notes

Do not overbake the brie, or the oil will separate. The cheese should feel like a firm pillow, not liquid. Letting the cheese come to room temperature for 30 minutes before baking helps it melt more evenly. If using a large wheel, check edges with parchment paper if the oven runs hot. Leftovers can be stored in the fridge for up to 3 days and reheated in a 300°F oven.
