Cozy White Bean Kale Sausage Soup

A comforting and easy-to-make soup featuring browned Italian sausage, creamy white beans, and tender kale, perfect for lazy Sundays or chilly days.

  • 12 oz Italian sausage, casings removed (sweet or mild preferred)
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 6 cups fresh kale, roughly chopped, stems removed (curly or dinosaur kale)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the white beans. Chop the kale into bite-sized pieces. Dice the onion, carrots, and celery. Mince the garlic. (About 10 minutes)
  2. Heat olive oil in a large heavy-bottomed pot over medium heat. Add the sausage, breaking it up with a wooden spoon. Cook until deeply browned and caramelized, about 7-8 minutes. Add a splash of broth if it starts sticking.
  3. Add diced onion, carrots, and celery to the pot with the sausage. Cook, stirring occasionally, until softened and fragrant, about 5 minutes. Add garlic, dried thyme, and red pepper flakes (if using), and cook for another minute.
  4. Pour in chicken broth and add the rinsed white beans. Bring to a gentle boil, then reduce heat to simmer.
  5. Simmer the soup uncovered for 15 minutes to meld flavors and soften carrots.
  6. Stir in chopped kale. Simmer for another 5-7 minutes until kale is tender but still vibrant green. Cook longer if softer kale is preferred.
  7. Season with salt and freshly ground black pepper to taste, remembering the sausage and broth add saltiness.
  8. Ladle soup into bowls and serve immediately, optionally with crusty bread or a light salad.

Notes

Brown the sausage well to develop flavor. Use low sodium broth to control saltiness. Rinse canned beans to remove excess sodium and canned flavor. Avoid overcooking kale to keep texture. Mash some beans to thicken soup if desired. Add a squeeze of lemon juice or drizzle olive oil before serving to brighten flavors.
