  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 pounds Yukon Gold potatoes (about 34 medium), diced into ½-inch cubes
  • 4 cups low-sodium chicken broth
  • 4 cups kale, stems removed and roughly chopped (Lacinato or curly kale)
  • ½ cup heavy cream
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (if sausage is very lean)

Instructions

  1. Brown the Sausage: Place a large pot or Dutch oven over medium-high heat. Add the Italian sausage (no oil needed if not lean). Break it up with a wooden spoon and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Use a slotted spoon to transfer the sausage to a plate, leaving about 1 tablespoon of rendered fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add the diced onion to the pot with the reserved fat. Cook for 3-4 minutes until soft and translucent. Add the minced garlic, dried oregano, and red pepper flakes (if using). Cook for another minute until fragrant.
  3. Cook the Potatoes: Add the diced potatoes to the pot and stir to coat. Cook for about 2 minutes.
  4. Add the Broth and Simmer: Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Bring to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes, until potatoes are fork-tender.
  5. Wilt the Kale and Add Cream: Stir in the chopped kale and cook for 2-3 minutes until wilted. Pour in the heavy cream and stir to combine. Return the browned sausage to the pot.
  6. Season and Serve: Taste and season with salt and black pepper as needed. Simmer for another 2-3 minutes to meld flavors. Serve hot.

Don’t skip browning the sausage—it builds deep flavor. Cut potatoes evenly for uniform cooking. Add cream at a gentle simmer to prevent curdling. Soup tastes even better the next day. For dairy-free, substitute heavy cream with full-fat coconut milk. For vegetarian, use vegetable broth and plant-based sausage or cannellini beans.
