  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • 1 box (15.25 oz / 432 g) yellow cake mix
  • ½ cup (115 g) unsalted butter, melted
  • 1 cup (100 g) chopped pecans, toasted
  • ⅓ cup (67 g) brown sugar, packed
  • 2 tbsp unsalted butter, softened
  • ½ tsp cinnamon
  • 8 oz (225 g) cream cheese, softened
  • ¼ cup (60 g) unsalted butter, softened
  • 1 ½ cups (180 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 23 tbsp heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together the canned pumpkin, granulated sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt until smooth and thick but pourable (about 3-4 minutes).
  3. Pour the pumpkin mixture evenly into the prepared baking dish and smooth the surface gently with a spatula.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin layer without stirring.
  5. Drizzle the melted butter evenly over the cake mix layer (about 2 minutes).
  6. In a small bowl, mix the toasted chopped pecans, brown sugar, softened butter, and cinnamon until crumbly but sticky. Scatter this pecan streusel evenly over the cake mix layer.
  7. Bake for 45-50 minutes until the top is golden brown and edges are bubbling. Tent with foil if streusel browns too quickly during the last 10 minutes.
  8. While the cake bakes, prepare the cream cheese frosting by beating softened cream cheese and butter until smooth (about 3 minutes). Gradually add powdered sugar and vanilla extract, then add heavy cream 1 tablespoon at a time until spreadable consistency is reached (5-7 minutes total).
  9. Let the cake cool for at least 20 minutes to set the layers.
  10. Spread the cream cheese frosting evenly on top of the cooled cake. Optionally, garnish with extra toasted pecan pieces. Serve warm or at room temperature.

Notes

Do not stir the cake mix into the pumpkin mixture to maintain the layered effect. Toast pecans in a dry skillet for 3-5 minutes before chopping for extra flavor. Keep an eye on the baking time to avoid burning the streusel; tent with foil if needed. Use softened (not melted) cream cheese and butter for smooth frosting. Powdered sugar is essential for frosting texture. Cooling the cake before frosting prevents melting.
