  • 1 cup (240g) fresh pumpkin puree
  • 1 large egg, room temperature
  • 2 tsp (4g) ground cinnamon
  • ½ tsp (1g) ground nutmeg
  • ½ cup (100g) brown sugar
  • 4 tbsp (56g) unsalted butter, softened
  • 4 oz (113g) cream cheese, softened
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 12 tbsp (15-30ml) milk, as needed

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk and granulated sugar. Sprinkle active dry yeast on top and let it sit for 5-10 minutes until foamy.
  2. Mix the Dough: In a large bowl, whisk together flour, salt, ground cinnamon, and ground nutmeg. Add the yeast mixture, melted butter, pumpkin puree, and egg. Stir until a sticky dough forms.
  3. Knead the Dough: Flour your surface lightly and knead the dough for about 8-10 minutes until smooth and elastic. Add a little flour if too sticky, but keep it moist.
  4. First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Prepare the Filling: Mix softened butter with brown sugar and optionally a teaspoon of cinnamon. Spread evenly over rolled-out dough.
  6. Roll and Slice: Roll dough into a 12×16-inch rectangle. Spread filling evenly, roll up tightly from the long edge, and slice into 12 equal pieces.
  7. Arrange and Second Rise: Place rolls cut-side up in a greased 9×13-inch baking dish. Cover and let rise for 30-45 minutes until puffy.
  8. Bake: Preheat oven to 350°F (175°C). Bake rolls for 30-35 minutes until golden brown. Cover with foil halfway if tops brown too quickly.
  9. Make the Maple Cream Cheese Drizzle: Beat cream cheese with powdered sugar, maple syrup, and vanilla extract. Add milk gradually to reach drizzle consistency.
