Cozy One-Pot Lasagna Soup with Ricotta

A quick and easy weeknight dinner that captures the soul-soothing flavors of classic lasagna in a comforting soup form, ready in just 30 minutes.

  • 1 pound (450g) ground beef (80/20 recommended)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • ½ pound (225g) Italian sausage, casing removed (optional)
  • 1 tablespoon olive oil
  • 1 jar (24-26 oz / 680-750g) marinara sauce
  • 2 cups (480ml) beef broth (low sodium)
  • 8–10 lasagna noodles, broken into pieces
  • 2 tablespoons tomato paste
  • 1 cup (240g) whole milk ricotta cheese
  • 1 large egg
  • 2 tablespoons fresh basil, chopped
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and cook until soft and translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Add ground beef and Italian sausage to the pot. Break up with a wooden spoon and cook until browned and no longer pink (8 minutes). Drain excess grease if desired.
  3. Stir in tomato paste and cook with the meat for 1 minute to caramelize. Pour in marinara sauce and beef broth, stirring to combine and scrape up browned bits from the bottom of the pot.
  4. Bring the soup to a boil. Add broken lasagna noodles, reduce heat to medium-low, and simmer uncovered for 10-12 minutes until noodles are tender. Adjust seasoning with salt and pepper.
  5. While soup simmers, whisk together ricotta cheese, egg, chopped basil, garlic powder, and a pinch of salt and pepper in a small bowl until smooth.
  6. Turn off heat. Ladle hot soup into bowls and dollop a generous spoonful of the ricotta mixture on top. Garnish with extra fresh basil if desired.

Notes

Break lasagna noodles before adding to ensure even cooking. Mix ricotta with an egg to prevent curdling. Leftovers thicken in the fridge; add broth or water when reheating. Do not freeze the ricotta topping; freeze the soup base separately.
