Cozy Harvest Apple Cider Mimosas

A warm, spiced autumn cocktail that combines reduced apple cider with dry sparkling wine for a festive and comforting brunch drink.

  • 2 cups fresh cloudy apple cider
  • 2 cups sparkling wine (Prosecco, Cava, or Champagne)
  • 2 cinnamon sticks
  • 3–4 whole cloves
  • 1 star anise pod
  • 1 small slice fresh ginger (peeled)
  • Garnishes: thinly sliced apples, rosemary sprigs, cinnamon sticks, nutmeg

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Add cinnamon sticks, cloves, star anise, and fresh ginger slice. Stir to submerge spices.
  2. Place saucepan over medium heat and bring to a gentle simmer. Reduce heat to low and simmer uncovered for 15-20 minutes until the cider reduces by one-third. Stir occasionally to prevent burning.
  3. Remove from heat and strain the cider through a fine-mesh strainer into a heatproof bowl, discarding the spices. Let cool to room temperature or chill in the fridge for 10 minutes.
  4. Ensure sparkling wine is very cold.
  5. To serve, fill glasses halfway with the cooled spiced cider. Top with cold sparkling wine, maintaining a 1:1 ratio or adjusting to taste. Pour slowly to preserve carbonation.
  6. Garnish with apple slices, rosemary, or cinnamon sticks and serve immediately.

Notes

Reduce cider by one-third to concentrate flavor. Do not mix with wine until serving to keep bubbles fresh. Can make reduced cider up to 2 days in advance. For non-alcoholic version, substitute sparkling wine with club soda.
