  • 1 cup chicken broth
  • 1 tbsp low sodium soy sauce
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and let it warm while you prep (about 10 minutes).
  2. Boil elbow macaroni in salted water until al dente, about 7-8 minutes. Drain and set aside.
  3. In a large skillet, heat 2 tbsp olive oil over medium heat. Add finely chopped onion and minced garlic, sauté until translucent (about 3 minutes).
  4. Add ground beef or turkey, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Season with salt, pepper, dried oregano, and smoked paprika.
  5. Stir in grated carrots and diced bell pepper, cooking for another 4 minutes until vegetables soften but still have a bit of crunch.
  6. Pour in tomato sauce and chicken broth. Let it simmer gently for 5 minutes until slightly thickened. Taste and adjust seasoning if needed.
  7. In a bowl, mix shredded mozzarella cheese with small-curd cottage cheese. For a creamier texture, beat in one large egg.
  8. Grease a 9×13-inch (23×33 cm) baking dish. Layer half the cooked pasta, then half the meat and veggie sauce, followed by half the cheese mixture. Repeat layers ending with cheese on top.
  9. Bake uncovered for 25-30 minutes until bubbly and golden on top. If the top browns too quickly, tent with foil halfway through.
  10. Let the dish rest for 5-10 minutes before serving.
  11. Garnish with fresh chopped parsley if desired and serve warm.
