A quick, easy, and comforting turkey chili that comes together in under 30 minutes. Perfect for busy weeknights or Friendsgiving gatherings, this one-pot meal is customizable and packed with flavor.

  • 1 lb lean ground turkey (93/7 or 99/0)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 (14.5 oz) cans diced tomatoes with green chiles (no-drain)
  • 1 (15 oz) can tomato sauce (no added sugar)
  • 2 (15 oz) cans black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (32 oz) carton low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Olive oil or cooking spray for browning

Instructions

  1. Prep the vegetables by dicing the onion and mincing the garlic. Rinse and drain the beans, then set everything aside.
  2. Heat a large pot or Dutch oven over medium-high heat. Add olive oil or cooking spray, then add the ground turkey. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes.
  3. Add the diced onion to the pot and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle in the chili powder, cumin, and smoked paprika. Stir to coat the meat and onions, then cook for 1 minute to bloom the spices.
  5. Pour in the diced tomatoes, tomato sauce, and chicken broth. Add the rinsed black beans and kidney beans. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low. Partially cover the pot and simmer for 15-20 minutes, stirring occasionally, until the flavors meld and the chili thickens.
  7. Taste the chili and season with salt and pepper as needed. If too thin, simmer uncovered; if too thick, add more broth.
  8. Ladle into bowls and serve with desired toppings.

Notes

For a thicker chili, mash some of the beans against the side of the pot. Let the chili rest for 10-15 minutes after cooking to allow flavors to intensify. This recipe is naturally gluten-free, but check broth and spice labels. It can be made vegetarian by swapping turkey for plant-based meat or extra beans.
