  • ½ cup sour cream, full-fat (120 ml)
  • ½ cup chicken broth, low sodium (120 ml)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • Salt and pepper to taste
  • 4 tablespoons butter, softened (60 g)
  • 2 pounds Yukon Gold or Russet potatoes, peeled and cubed (900 g)
  • ½ cup milk or cream, warmed (120 ml)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the pork chops dry with paper towels and season lightly with salt and pepper on both sides. (About 5 minutes)
  2. In a medium bowl, combine ranch seasoning, condensed cream of mushroom soup, sour cream, chicken broth, garlic powder, and onion powder. Stir until smooth. (3 minutes)
  3. Place pork chops in a single layer at the bottom of the crockpot. Pour the ranch sauce mixture evenly over the chops. (2 minutes)
  4. Cover and cook on low for 4 to 6 hours, or until pork chops are tender and reach an internal temperature of 145°F (63°C). Avoid lifting the lid too often. (4-6 hours)
  5. About 30 minutes before pork chops finish, peel and cube potatoes. Place in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook until tender, about 15-20 minutes. (20 minutes)
  6. Drain potatoes well. Return to pot or bowl. Add softened butter and warmed milk or cream. Mash until smooth and creamy. Season with salt and pepper to taste. (5 minutes)
  7. Once pork chops are done, taste sauce and adjust seasoning if needed. Sprinkle chopped fresh parsley over pork chops and mashed potatoes. (2 minutes)
