  • 1 tsp apple cider vinegar
  • 1 tsp ground cinnamon

  • 2 tbsp cornstarch
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup light brown sugar
  • 1/2 cup all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel, core, and slice apples into 1/4 inch thick wedges. Place in a large mixing bowl.
  3. Sprinkle granulated sugar, cinnamon, nutmeg, apple cider vinegar, and cornstarch over the apples. Toss to coat evenly and let sit for 10 minutes.
  4. In a medium bowl, combine oats, chopped pecans, flour, brown sugar, and salt.
  5. Cut the cold butter into the dry mixture using a pastry cutter or fork until it resembles coarse sand with pea-sized clumps.
  6. Pour seasoned apples into a 9×9 inch baking dish and spread evenly.
  7. Sprinkle the oat pecan streusel generously over the apples and press down lightly.
  8. Bake for 45-50 minutes until topping is golden brown and juices are bubbling.
  9. Cool for 15-20 minutes before serving to allow filling to thicken.

Use cold butter for the streusel to ensure a crispy texture. A mix of tart and firm apples (like Granny Smith and Honeycrisp) works best to prevent mushiness. Let the crisp cool for at least 15-20 minutes before serving to allow the cornstarch to thicken the juices. Toasting pecans beforehand enhances their flavor.
