Cozy Chocolate Chip Cookie Dough Energy Bites - featured image

These no-bake energy bites combine creamy almond butter, finely ground oats, honey, and mini chocolate chips for a quick, wholesome snack that tastes like cookie dough.

Ingredients

Scale
  • 1 cup (90g) rolled oats, ground finely
  • 1/2 cup (128g) creamy almond butter
  • 1/4 cup (85g) honey (or maple syrup for vegan option)
  • 1/2 cup (90g) mini chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Grind the oats: Add 1 cup (90g) of rolled oats to your food processor and pulse until they reach a fine, flour-like consistency (about 1-2 minutes).
  2. Mix the wet ingredients: In a mixing bowl, combine 1/2 cup (128g) creamy almond butter, 1/4 cup (85g) honey, and 1 teaspoon vanilla extract. Stir until smooth and creamy (about 1-2 minutes).
  3. Combine dry and wet: Add the ground oats to the wet mixture and stir well until a sticky dough forms (about 2 minutes). If too dry, add water or more honey one teaspoon at a time.
  4. Fold in chocolate chips: Gently fold in 1/2 cup (90g) mini chocolate chips, distributing evenly without smashing.
  5. Shape the bites: Scoop tablespoon-sized portions (about 15g each) and roll into balls. Place on a parchment-lined baking sheet.
  6. Chill: Refrigerate for at least 30 minutes to firm up before serving.

Notes

Chilling is crucial to help the bites hold their shape and improve texture. Use certified gluten-free oats for gluten-free version. Substitute honey with maple syrup or agave nectar for vegan option. Gently fold in chocolate chips to avoid melting. Store in airtight container in fridge up to one week or freeze up to three months.
