  • 2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 tablespoons unsalted butter, melted
  • 1 ½ cups whole milk or half-and-half
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice potatoes into about 1/8-inch rounds. Rinse in cold water and pat dry.
  3. In a medium saucepan, melt butter over medium heat. Add chopped onion and garlic, cook until softened (about 3 minutes).
  4. Stir in flour and cook for one minute to form a roux.
  5. Gradually whisk in milk, stirring constantly until thickened (about 5-7 minutes). Remove from heat.
  6. Stir in 1 ½ cups cheddar and mozzarella until melted and smooth. Season with salt, pepper, and paprika.
  7. Lightly butter a 9×13-inch baking dish. Layer half the potatoes evenly, pour half the cheese sauce over them.
  8. Repeat with remaining potatoes and cheese sauce.
  9. Sprinkle remaining ½ cup cheddar and optional Parmesan cheese on top.
  10. Cover with aluminum foil and bake for 35 minutes.
  11. Remove foil and bake uncovered for 15-20 minutes until bubbly and golden brown.
  12. Let casserole rest for 10 minutes before serving.

Notes

For a crispier top, broil the casserole for 2-3 minutes at the end of baking, watching carefully to avoid burning. Use freshly shredded cheese for better melting and crisping. Frozen pre-sliced potatoes can be used if thawed and patted dry. To make gluten-free, substitute flour with gluten-free blend or cornstarch.
