  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (56g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1/2 cup (120ml) sour cream
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a 10-inch oven-safe cast iron skillet, melt 1/4 cup unsalted butter over medium heat.
  2. Add 1/2 cup granulated sugar, stirring constantly until sugar melts and turns golden amber. Remove from heat briefly to avoid burning.
  3. Arrange thinly sliced apples in overlapping circles on top of the caramel in the skillet.
  4. Sprinkle 1/4 teaspoon ground cinnamon and a pinch of salt evenly over the apples. Set aside.
  5. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  6. In a large bowl, cream softened butter with granulated sugar until light and fluffy, about 3 minutes.
  7. Add egg, vanilla extract, and sour cream to the creamed mixture and mix until smooth.
  8. Gradually fold dry ingredients into wet mixture using a rubber spatula, being careful not to overmix.
  9. Pour batter evenly over the caramelized apples in the skillet, spreading gently to cover.
  10. Preheat oven to 350°F (175°C).
  11. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean and edges are golden brown.
  12. Remove skillet from oven and let cool for about 10 minutes.
  13. Place a large serving plate over the skillet and carefully invert the cake onto the plate.
  14. While cake bakes, chill a mixing bowl and whisk attachment.
  15. Pour heavy cream into chilled bowl, add powdered sugar, ground cinnamon, and vanilla extract.
  16. Whip on medium-high speed until soft peaks form.
  17. Serve warm slices of cake topped generously with cinnamon whipped cream.
