Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 56 medium peaches)
  • 1/3 cup brown sugar, packed
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon lemon juice
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup cold buttermilk (or 3/4 cup milk + 1 tablespoon vinegar, let sit 5 minutes)
  • Optional: melted butter and coarse sugar for brushing topping

Instructions

  1. Prepare the Peach Filling (10 minutes): In a large bowl, combine sliced peaches with brown sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss gently to coat evenly. Set aside.
  2. Preheat the oven to 375°F (190°C) and position the rack in the middle.
  3. Make the Biscuit Crust (15 minutes): In a medium bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt. Add cold butter cubes and cut into the dry ingredients until mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Add cold buttermilk and stir just until dough comes together. Adjust flour or buttermilk if needed to achieve slightly sticky but shape-holding dough.
  5. Assemble the Cobbler (5 minutes): Pour peach filling into prepared baking dish. Drop spoonfuls of biscuit dough over peaches in a rustic pattern.
  6. Optional: Brush biscuit dough with melted butter and sprinkle coarse sugar on top.
  7. Bake for 35-40 minutes until biscuit crust is golden brown and peach filling bubbles around edges.
  8. Cool on a rack for 10 minutes before serving to thicken filling.

Notes

Keep butter cold for flaky biscuit crust. Don’t overmix biscuit dough to avoid toughness. Use ripe but firm peaches to prevent soggy filling. Tent with foil if crust browns too quickly. Can use frozen peaches if thawed and drained. For gluten-free, substitute flour with gluten-free blend. For dairy-free, use coconut oil and plant milk with vinegar.
