Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8-inch square baking dish with butter or non-stick spray.
  2. Peel and slice about 6 medium peaches into 1/2-inch thick slices. Toss them gently in a large bowl with 1/2 cup brown sugar, 1 tablespoon lemon juice, 2 tablespoons bourbon, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt. Let sit for about 10 minutes.
  3. In a separate bowl, combine 1 cup rolled oats, 3/4 cup all-purpose flour, and 1/2 cup packed brown sugar. Add 1/2 cup cold, cubed unsalted butter and mix with a pastry cutter or fingers until the mixture resembles coarse crumbs with small chunks of butter visible.
  4. Pour the peach mixture into the prepared baking dish, spreading evenly. Sprinkle the oat crumble evenly over the top without pressing down.
  5. Bake for 35-40 minutes until the topping is golden brown and crisp and the peach filling is bubbly around the edges. If the topping browns too quickly, tent loosely with foil halfway through baking.
  6. Cool slightly on a wire rack for 10-15 minutes before serving to allow the filling to thicken.
