  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • ¾ cup (180ml) fresh apple cider
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping: ½ cup (100g) granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your 12-cup muffin tin or line it with silicone or paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a separate bowl, whisk melted unsalted butter, granulated sugar, eggs, fresh apple cider, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. Do not overmix; small lumps are okay.
  5. Divide the batter evenly among the muffin cups, filling about two-thirds full.
  6. Bake for 18-22 minutes until golden brown and a toothpick inserted into the center comes out clean.
  7. While muffins bake, mix granulated sugar and ground cinnamon in a shallow bowl for the topping.
  8. When muffins come out, let them cool for about 3 minutes until warm but not hot. Roll each muffin in the cinnamon sugar mixture to coat all sides.
  9. Place coated muffins on a cooling rack and let cool completely for 10-15 minutes before serving.

Notes

Do not overmix the batter to keep muffins tender. Use fresh apple cider for best flavor. Roll muffins in cinnamon sugar while warm for a perfect crunchy coating. If apple cider is very sweet, reduce sugar by 1-2 tablespoons. For gluten-free, substitute flour with a 1:1 gluten-free blend.
