  • 1 cup (240 ml) buttermilk
  • For the brown butter glaze:
  • ½ cup (115 g) unsalted butter
  • 1 ½ cups (180 g) powdered sugar, sifted
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional: water or milk to thin glaze if needed
  • Optional add-ins: ½ cup chopped dried cranberries or fresh apple chunks

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a small saucepan over medium heat. Simmer gently until reduced by half, about 10-15 minutes. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 10-inch bundt pan with butter and dust with flour or use baking spray with flour.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
  4. In another bowl, beat softened butter, granulated sugar, and light brown sugar until light and fluffy, about 3 minutes.
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. Alternate adding the flour mixture and buttermilk to the butter mixture, starting and ending with flour. Mix gently until just combined.
  7. Fold in the cooled apple cider reduction.
  8. Pour batter evenly into the prepared bundt pan. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes, then invert onto a cooling rack.
  10. To make the glaze, melt butter in a small saucepan over medium heat until golden brown and nutty, about 4-5 minutes. Remove from heat.
  11. Whisk in powdered sugar, maple syrup, vanilla extract, and salt. Add water or milk by tablespoon if glaze is too thick.
