  • 1 cup plain dried breadcrumbs
  • 2 large eggs, room temperature
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (like Tabasco)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup ketchup
  • 1/4 cup packed light or dark brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C). Line a sheet pan with parchment paper or grease a 9×5 inch loaf pan.
  2. Finely dice the onion and mince the garlic.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, hot sauce, salt, and pepper. Mix gently with hands until just combined; do not overmix.
  4. Transfer meat to the prepared pan. If using a sheet pan, shape into a free-form loaf (10×4 inches). If using a loaf pan, press firmly. Create a slight well in the center.
  5. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth.
  6. Brush half of the glaze over the top and sides of the meatloaf.
  7. Bake for 40 minutes. Tent loosely with aluminum foil if the glaze darkens too quickly.
  8. Remove from oven and brush the remaining glaze over the top.
  9. Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
  10. Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Use 80/20 ground beef to ensure moisture. Do not overmix the meat to avoid a tough texture. Apply glaze in two stages to prevent burning. Let the meatloaf rest for 10 minutes before slicing to keep it juicy. Can be substituted with pork or turkey, or made gluten-free using GF breadcrumbs.
