Instructions

  1. In a stand mixer, beat softened butter on medium speed until smooth (about 2 minutes).
  2. Add granulated and brown sugar; beat on high speed for 3-4 minutes until pale and fluffy.
  3. Beat in eggs one at a time, mixing well after each addition, then add vanilla extract. Scrape down the bowl.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture on low speed, mixing just until the flour disappears.
  6. Divide dough in half, flatten into discs, wrap in plastic, and refrigerate for at least 2 hours (or freeze for 30 minutes).
