Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. Make the cream cheese filling: In a small bowl, beat softened cream cheese with ¼ cup granulated sugar, 1 egg yolk, and ½ teaspoon vanilla extract until smooth. Set aside.
  3. Mix dry ingredients: In a large bowl, whisk together 1 ¾ cups flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Mix wet ingredients: In a separate bowl, whisk together 1 cup granulated sugar, ½ cup brown sugar, vegetable oil, eggs, pumpkin puree, and 1 teaspoon vanilla extract until smooth.
  5. Combine wet and dry ingredients: Pour wet ingredients into dry and fold with a rubber spatula until just combined. Do not overmix.
  6. Make streusel: In a small bowl, combine ½ cup flour, ¼ cup granulated sugar, ¼ cup brown sugar, and ½ teaspoon cinnamon. Cut in cold butter until mixture resembles coarse sand.
  7. Assemble muffins: Spoon about 1 ½ tablespoons batter into each liner. Drop a heaping teaspoon of cream cheese filling in the center. Top with another 1 ½ tablespoons batter. Sprinkle streusel on top.
  8. Bake for 18-22 minutes, until tops are golden and a toothpick inserted into the muffin part comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

Do not overmix the batter; a few lumps are fine. Chill the cream cheese filling if your kitchen is warm to prevent it from spreading. Let muffins cool in the pan for 5 minutes before removing. For best streusel texture, use cold butter and do not overwork it.
