This homemade pumpkin spice latte uses real pumpkin puree, not just syrup. It’s creamy without being heavy, spiced without being overwhelming, and sweet enough to feel like a treat without sending you into a sugar crash by noon.

  • 1 cup (240 ml) freshly brewed strong coffee (dark roast or espresso)
  • 1 cup (240 ml) whole milk (or 2%, oat milk, or full-fat coconut milk for dairy-free)
  • 3 tablespoons (about 45 grams) pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 tablespoons (30 ml) maple syrup (real maple syrup preferred)
  • 1 teaspoon (5 ml) vanilla extract (pure vanilla extract)
  • 1 teaspoon (about 2 grams) pumpkin pie spice
  • 1/2 teaspoon (about 1 gram) cinnamon
  • Pinch of salt
  • Whipped cream (for topping, optional)
  • Optional garnish: sprinkle of cinnamon or pumpkin pie spice, cinnamon stick

Instructions

  1. Brew 1 cup of strong coffee. While it’s brewing, move on to the next step.
  2. In a small saucepan, combine 1 cup of whole milk and 3 tablespoons of pumpkin puree. Whisk until mostly incorporated.
  3. Place the saucepan over medium heat. Whisk constantly until hot but not boiling, about 3 to 4 minutes. Small bubbles will form around the edges when ready.
  4. Remove from heat. Whisk in 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, 1 teaspoon of pumpkin pie spice, 1/2 teaspoon of cinnamon, and a tiny pinch of salt until fully combined.
  5. Optional but recommended: Pour the milk mixture into a blender and blend on low for about 15 seconds until smooth.
  6. Pour the brewed coffee into a mug. Slowly pour the pumpkin milk mixture over the coffee and stir gently to combine.
  7. Top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice. Serve immediately.

Notes

Don’t boil the milk; it can scald and develop a skin. Use room temperature ingredients if possible. Blend the pumpkin milk mixture for the smoothest texture. Taste before serving and adjust sweetness or spices. Make extra pumpkin milk and store in the fridge for up to 3 days. Clean the blender immediately after use to prevent pumpkin from sticking.
