This Homemade Cinnamon Sugar Apple Fritter Bread captures all the sticky, caramelized, fried-dough vibes of a real apple fritter in a much more manageable loaf form. It’s quick, easy, and filled with warm, jammy apple chunks and a crackly cinnamon sugar crust.

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1½ tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 2 large eggs, room temperature
  • ¾ cup (180ml) whole milk
  • ½ cup (113g) unsalted butter, melted
  • 2 tsp vanilla extract
  • 2 medium apples (about 300g), peeled, cored, and diced into ½-inch cubes (Granny Smith, Honeycrisp, or Braeburn recommended)
  • ⅓ cup (65g) granulated sugar (for cinnamon sugar swirl)
  • 1 tbsp ground cinnamon (for cinnamon sugar swirl)
  • 3 tbsp (42g) unsalted butter, melted (for cinnamon sugar swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, then line with parchment paper, leaving a 2-inch overhang on the two long sides.
  2. In a small bowl, whisk together ⅓ cup granulated sugar and 1 tbsp ground cinnamon for the cinnamon sugar swirl. Set aside. In another small bowl, melt 3 tbsp butter for the swirl.
  3. Peel, core, and dice apples into ½-inch cubes. Toss with about 1 tbsp of the cinnamon sugar mixture.
  4. In a large bowl, whisk together flour, 1 cup granulated sugar, brown sugar, baking powder, salt, and 2 tsp ground cinnamon.
  5. In a separate medium bowl, whisk eggs until light and frothy. Add milk, ½ cup melted butter, and vanilla extract; whisk until combined.
  6. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula just until flour disappears (a few lumps are fine). Do not over-mix.
  7. Pour half the batter into the prepared pan. Sprinkle with half the cinnamon-sugar coated apples. Drizzle with about half the melted butter for the swirl. Sprinkle with about ⅓ of the remaining cinnamon sugar mixture.
  8. Gently spoon remaining batter over the apple layer. Top with remaining apples. Drizzle with remaining melted butter. Sprinkle with remaining cinnamon sugar mixture.
  9. Using a butter knife, gently run it through the batter in a figure-eight pattern (4-5 passes) to swirl.
  10. Bake on center rack for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly after 40 minutes, tent loosely with foil.
  11. Cool in pan on a wire rack for 15-20 minutes. Using parchment handles, lift bread out and transfer to wire rack to cool completely before slicing.

Notes

For best results, use firm, tart-sweet apples like Granny Smith or Honeycrisp. Do not over-mix the batter to avoid a tough loaf. The parchment paper handles make removal easy. Start checking for doneness at 50 minutes. Store in an airtight container at room temperature for up to 3 days. Freezes well for up to 3 months.
