Little smoked sausages wrapped in bacon and coated with a sticky, caramelized brown sugar glaze. These sweet, smoky, and salty appetizers are perfect for parties and disappear in minutes.

  • 14 oz little smokies (cocktail sausages)
  • 1 lb thick-cut bacon
  • 1/2 cup packed brown sugar (light or dark)
  • 1/2 teaspoon chili powder or cayenne pepper (optional)
  • Toothpicks (soaked in water for 10 minutes)

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Cut each bacon slice into thirds (or halves if using thick-cut).
  3. Wrap each little smokie with a piece of bacon, overlapping the ends slightly. Secure with a toothpick.
  4. In a small bowl, mix brown sugar and chili powder (if using).
  5. Roll each wrapped smokie in the brown sugar mixture, pressing to coat. Place seam-side down on the wire rack.
  6. Bake for 25-30 minutes, flipping halfway through (at 12-15 minutes) using tongs.
  7. Check for doneness: bacon should be crispy and sugar dark amber and glossy. Optionally broil 1-2 minutes for extra crunch.
  8. Let cool for 5 minutes before serving.

Notes

Pat smokies dry before wrapping to help bacon stick. Don’t overcrowd the rack; leave space between pieces. Watch sugar carefully to prevent burning. Can be prepared up to 24 hours in advance (wrap and coat, then refrigerate). Reheat in oven or air fryer, not microwave.
