These crispy bacon-wrapped jalapeño popper bites are the ultimate game day snack. With a creamy, spicy filling and perfectly crispy bacon, they’re easy to make and impossible to resist.

  • 8 ounces cream cheese, softened
  • 23 fresh jalapeños, finely diced
  • 1/2 cup shredded cheddar cheese
  • 12 ounces thin-cut bacon, cut into thirds
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Optional: Ranch dressing or sour cream for dipping

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet and set it aside.
  2. Dice the jalapeños: cut off stems, slice in half lengthwise, remove seeds and membranes, then dice into small pieces.
  3. In a medium mixing bowl, combine softened cream cheese, diced jalapeños, shredded cheddar cheese, garlic powder, and black pepper. Stir until well combined and smooth.
  4. Using a small cookie scoop or teaspoon, scoop portions of the filling and roll into 1-inch balls (about 20-24 balls).
  5. Cut bacon strips into thirds. Wrap one piece of bacon around each cream cheese ball, overlapping ends slightly. Place seam-side down on the wire rack.
  6. Bake for 20-25 minutes, until bacon is golden brown and crispy. Rotate the pan halfway through for even cooking.
  7. Let the bites rest on the wire rack for about 5 minutes before serving. Serve warm with ranch dressing or sour cream for dipping, if desired.

Notes

For best results, use thin-cut bacon and a wire rack to ensure crispy bacon all around. If the filling is too soft, refrigerate for 10 minutes before rolling. To make ahead, assemble bites up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time. For a milder version, remove all seeds and membranes from jalapeños.
